Homemade Pizza

We all have those trigger foods that we just can't resist. For me, that is PIZZA!!! I love making my own because I know exactly what goes in it and I can make it the way I want it!! =) 


What You'll need


Pizza Dough (store bought or see below for my recipe)
Cornmeal 
Sauce (see below)
2 cups veggies (Your choice!)
salt & black pepper
1 cup cheese (mozzarella and/or provolone)
Dried Oregano 
Red Pepper Flakes 


Toppings (pick 2-3)
Bell peppers (cut into stripes)
Red Onions
Mushrooms
Broccoli 
Cherry Tomatoes
Eggplant 
Zucchini
Small Red Potatoes
Frozen Spinach (thawed & squeezed dry)


Pick your veggies then cut/slice into small pieces or stripes


Sauce
I'll all about easy!


  • Red Sauce- Mix 1 cup crushed tomatoes with 1 large garlic clove minced, 1 tablespoon extra virgin olive oil
Pizza Dough



1/2 cup warm water and 1 1/4 tepid water
1 packet active dry yeast
2 tbsp extra virgin olive oil
4 cups bread flour
2 teaspoons table salt


Place 1/2 cup warm water in a 2-cup measuring cup. Whisk the yeast into the warm water and let it stand until it dissolves and expands (about 5 min). Add the remaining 1 1/4 cup water and the oil to the yeast mixture.




Meanwhile, pulse the flour and salt in your food processor.  Pour the yeast mixture over the flour and pulse to form a rough ball.   Process until the dough is smooth (about 30 seconds longer). Turn the dough onto a floured surface and knead for a few secs. 
Place that bad boy in a bowl coated with cooking spray and cover it with plastic wrap.  Let it rise until it doubles in size (2-3 hours)  I used the quick rise yeast so it was about 30 minutes.


Without punching it down, down your dough onto a lightly floured surface.  Use a chefs knife to cut the dough into your desired size. 
To make 4 mini pizzas, use HALF the dough and you can freeze or refrigerate the other half. OR you can make the whole shebang! lol 


Preheat your oven to 450 degrees
Place the dough on a corn meal coated baking sheet


Spread sauce on pizza, cover with your veggies, sprinkle with salt, pepper, oregano, and red pepper flakes.


Bake until golden brown- about 12-15 min. Top with cheese and throw back in the oven for another 5 min.

Supplies 
Add flour and salt to processor


1/2 cup warm water + 1 Packet of yeast 
Add remaining water and olive oil to your yeast mixture


Add yeast/oil mixture to food processor


Process until smooth and santiny
Knead on a floury surface
Spray non-stick spray into a bowl
Put dough ball in bowl and cover with plastic wrap 


Prep your veggies


Read sauce = garlic cloves minces + Stewed tomatoes


cover pan with corn meal (I used polenta)




Use dough to make mini pizzas and cover with sauce




Add Veggies!


I decided to also make a big one!


After 12-15 min, remove pizza from oven. Add cheese and put back in oven for 5 min


Yummy!


Taste test!






I put back in the oven for more crispiness!

Voila!
