Pumpkin Protein Pancakes

Hol-EE CRAP ya'll! I think these might be the most delicious protein pancakes I've ever made!
I want moreeeee!!
Fall is definitely in the air- and nothing is more comforting than snuggling up in scarves and sweaters with some pumpkin spice in the air. I was in serious need of some comfort food and this hit the spot!
What you need:
  • 1 scoop protein powder (I used BSN Fresh Cinnamon)
  • 3-4 tablespoons of canned pumpkin pureee
  • 2-3 egg whites or about 1/4 cup liquid egg whites
  • 2 tablespoons of almond milk (or whatever milk you prefer)
  • 1/2 tsp of Stevia
  • dash of baking powder
  • dash cinnamon
  • and optional...1 tablespoon ground flax seed
Now what?
1. Mix all of that good stuff together in a bowl.
2. Cook batter in a pan like good ole fashioned pancakes!

I tried to make shapes like my grandma used to....but sad to say Im not that skilled lol

Stuffed French Toast!
A Big Greek French Toast!
This fabulous recipe is from Fit, Fun and Delish – a wonderful blog dedicated to a healthy lifestyle. Thank you Ana!
2 slices of apple cinnamon bread
1 egg
Cooking spray
8 oz Voskos Greek Yogurt (24 grams of protein per serving!)
1 packet of Stevia or your favorite sweetener
1/2 banana
1/2 tbsp chia seeds
3 tbsp of sugar free maple syrup
1. Heat griddle or pan to medium high heat and spray with PAM. Scramble egg and dip bread into batter coating both sides. Place on griddle and cook each side until golden brown.
2. While the bread is toasting, mix the yogurt with cinnamon to taste and the packet of stevia.
3. Arrange a slice of toast, add some yogurt, chia seeds & banana slices. Add the other slice and repeat the layers. Add the syrup and Kalí óreksi! (that’s Bon Appetit in Greek!
Creamy Mashed Cauliflower

1 head of cau­li­flower (flo­rets only — no stems)
1 small, 6 oz con­tainer of greek yogurt
2 tbsp but­ter
3 tbsp grated parmi­giano reg­giano
2 cloves of gar­lic chopped
1/​2 small shal­lot chopped
1 chopped scal­lion for gar­nish
Salt, pep­per and sea­son­ings to taste
In a medium pot, bring water to boil
Add cau­li­flower flo­rets to the boil­ing water and let cook for about 8 min­utes or until soft. Remove and drain. In a food proces­sor, com­bine the cau­li­flower with the greek yogurt, but­ter, gar­lic and shal­lots and blend until a creamy con­sis­tency. Add salt and pep­per or Adobo or sea­son­ings of your choice and blend once more. Trans­fer to a bowl and while hot, mix in the parmi­giano reg­giano

Beachbody Leadership Retreat 2012

Woweee! We had an action-packed, educational, fun filled weekend in Dana Point at the 2012 Beachbody Leadership Retreat. They really rolled out the red carpet and pampered us!

If you are a coach, you want to make sure this is on your goal list for 2013!!!! 

Beachbody pulled out all of the stops for us! Seriously, our room was incredible. We did NOT have to pay for hotel, travel, parking, food...they hooked us UP!
We started the weekend with a Welcome Reception with the top coaches and the fun never slowed down!

It was an absolute honor to listen to the publisher of Success Magazine/author of The Compound Effect...Mr Darren Hardy! 

We had an awesome team building game, lots of new announcements and training and ended it with a BANG! Our 80s party was CRASHED by Chili from TLC!!!
