The Breakfast Cookie!

Guys, I shared a great recipe for breakfast cookies earlier this week--so please don't disregard this very important post. Seriously, this is a MUST READ. I have stumbled upon the Holy Grail of breakfast cookiedom. Behold, the healthiest, tastiest, easiest breakfast cookie creation that you will be making for years to come. Read on...

I told you about a banana soft serve recipe that would be life changing, and many of you have written in saying that it is--hands down--the most amazing thing you have made in a long time. Now, I bring you the breakfast cookie that might just have the same effect.
I've told you about Gina, the fabulous fitness guru behind the blog Fitnessista, a blog I love and check in on all the time for healthy eating inspiration. Well, I have to tell you about her recipe for no-bake breakfast cookies.
Gina's Amazing Breakfast Cookie
Recipe adapted for Vitamin G, courtesy of Fitnessista from Glamour.com
Ingredients:
1/3 cup oats
1 tablespoon of nut butter (almond, peanut, whatever--pick your fave!)
A sprinkling of protein powder such as Designer Whey (note: this is optional)
1/8 cup of soy milk or milk (or almond milk or whatever you like)
1/2 cup of optional add ins (ideas: mashed bananas, canned pumpkin, apple sauce)
1/4 teaspoon of cinnamon
Optional: A sprinkling of something sweet, like a little sugar, agave or honey (Gina uses stevia)
Preparation:
Mix all ingredients together, then put the "dough" on a plate and form into a flat, round shape. Cover with plastic wrap and refrigerate overnight. It will harden slightly from the nut butter and the oats will soften from the milk. In the morning, grab a spoon and enjoy!

What is P.A.P. Training?

 So many exciting things going on right now. I am officially leaving for Chicago tomorrow evening!!!  I cannot wait!! It's going to be a great team bonding experience, a chance to grow my business and LIVE MY PASSION!
It never ceases to amaze me how different your life is when you start living with PURPOSE!! Time is even more PRECIOUS! There aren't enough hours in the day and my mind is CONSTANTLY running on overdrive with ideas. Vegetables on their own are healthy foods, but how you cook vegetables can affect their nutritional value. Most vegetables are healthiest when eaten raw, and boiling them can leech out the vitamins and minerals that have you eating veggies in the first place.
While raw vegetables do have the highest concentration of vitamins and minerals, there are a couple exceptions. Garlic and onions are actually healthier when cooked because heat helps activate their inherent sulfur compounds that provide health benefits.
Research shows that vegetables lose a small amount of their nutritional value for every 30 seconds of steam exposure. However, this loss is so minimal, that steaming veggies for a minute or two isn’t going to render them useless, but overcooking will drastically reduce the nutrition quality of vegetables.  In addition, steaming provides you with a crisper, tastier finished product that also retains more flavor.
Boiling is a common means of doing damage to healthy vegetables. Any veggie that you would consider boiling can be steamed instead. Boiling results in greater nutrient loss than surrounding a vegetable with hot steam. There is no good reason to boil, so don’t do it! Even large vegetables, like butternut squash, can be fully cooked by steam in 10 minutes.
Stir-frying is another means of locking in vegetable nutrition. Short exposure to high heat always works to retain as much nutrition as possible, and the small amount of oil used when stir-frying helps seal in vitamins and minerals.
Also keep in mind that vegetables naturally lose nutritional content as they age or are exposed to light and air. Fresher is better. To get the maximum health benefits from your veggies, eat them soon after picking.

Shine your light on the world!

I think back to that night in the gym...running the treadmill. I remember feeling overwhelmed, frustrated and like things were never going to change. I felt like I was giving this whole fitness thing my best- but it wasn't paying off. I felt gross, uncomfortable in my own skin. You get to a point where you just think it's your genetics- that you can't even change your body. You were just the unlucky one born with no metabolism. It's really easy to give up when you don't think you can make a change.
I remember being intrigued by the P90X infomercial. I literally watched it for the whole hour I was on the treadmill. I just couldn't understand how a dvd workout was going to actually work and I thought the people's results were photo-shopped. 
Even after getting P90X- it was very intimidating. Honestly, it didn't matter that I went to the gym because I was not prepared AT ALL for this workout. I made it about 15 minutes in before I quit.  Since it was so hard- I gave up time and time again and let it collect dust in my closet. 
Finally, one night at 4am I was searching youtube for P90X before and after transformations.  I don't know what spoke to me about Lindsay's video...but I thought...ok she can do...maybe I can do it too. I signed up with her as my coach and became part of a wonderful, supportive FAMILY of people. 
JUST by achieving my goals and realizing that you CAN change your body and you CAN love your body...I've been able to share my story and help others realize the same thing. If you are sitting there feeling demoralized, frustrated or alone....We are here for YOU!  All you have to do is REACH OUT!

I found this today and it really struck a chord. The most powerful thing you can do in life is to live your BEST life, be the BEST you and light other people's lives with what you have learned. Believe that you are meant for GREAT THINGS... That you were given specific talents, skills and circumstances for a REASON... a PURPOSE that only YOU can fulfill! If you are NOT using these skills, talents, & circumstances that you have been given to serve others... then I am here to tell you, it is TIME! Time to live up to YOUR greatest potential, to be the person you were designed to become! BLESS this world with YOUR unique light! :)"


Here is the PERFECT example of that- By working on my own fitness goals, I inspired Jen. Through this experience, Jen and I became really good friends and I encouraged her to go out in the world and shine her light. She inspired and befriended Natasha, who wrote this today....

I have NEVER in my life had so much support period, and I know that this time I will succeed because I am able to go back and forth with all of you and encourage you like you encourage me. Ok, I don't know what's going on in the air out there but I have been getting a lot of emails lately about lack of motivation! People- it's time to get serious! Everyone has their ups and downs but that's no reason to throw in the towel. 
It's GAME Time people! Stop allowing yourself to make excuses and stop sabotaging your success!!! 


You can be Sore today or Sorry tomorrow!


Give yourself your 100%!  Give your everything. Don't save it for later, don't relax, don't take a break until you have given your all. Until you KNOW you did your VERY BEST and you're making a better tomorrow for yourself. Are you going to live in regret?
It won't be easy- It's going to take heart, PASSION, determination, drive, energy and will power! Yes, It's going to hurt- there will be pain, sweat, frustration. You will doubt yourself, you might even try to give up. You'll wonder if you can even do this or if it's even worth it. You'll think of EVERY reason why you should just throw in the towel.
You will find yourself reaching for that "easy button." Press it and you instantly travel the easy road. That's fine if want to stay right where you are. 
But giving 100 percent, working hard, seizing the moment- that's what will the RESULTS you desire.


Push your limits! Draw energy from untapped reserves. Block out that self doubt! Push FORWARD! 

I'm not saying workout to the point of exhaustion or injury. But I am saying- DRAW A LINE IN THE SAND. 
Decide that TODAY is the day that changes all of your tomorrows!!! 
You CAN do this!


#1 Make a commitment to YOURSELF and share it with the world. One of the things I did when I was starting out was make a youtube video with my "Day 1" pics. Ughhh I can hear you groaning from here. Yes, it IS embarrassing and you feel exposed. You don't have to put your face or name on it but I encourage everyone to do this.  If this is what it takes- seeing yourself up on the "big screen" for everyone to see! TRUST me you will work your booty off to have good results for your 30 day updates. Suddenly cake and ice cream don't look so great


#2 Make a commitment to help OTHERS. I signed up as a Beachbody Coach for a couple of reasons. A) Because of the discount lol B) By helping others reach their fitness goals, it REALLY pushed me to lead by example especially on those days I didn't want to workout. There is something about people looking up to you that makes you push THAT much harder. Ok, so I know you are saying "But Kati, I literally JUST started...I am SOO far away from my goal. How could people look up to me?"
It's about what you are doing, how you are changing. People will see that and your new found confidence and positivity will SHINE through. It's NOT about being perfect- it's about being REAL. And the greatest skill you can possess as a coach, is your ability to LISTEN! It's about helping someone LONG term- not about pushing products on them. it's about matching them up with a fitness routine or nutritional item that actually works for them in their life! 
It's a lot easier to find the motivation to workout when you know you are helping other people do the same! Not to mention the financial incentive (gotta pay the bills right! lol). The better you stick to the program- the better your results. People will see that it works and what to try it themselves! 

#3 Start with something you can do. Whether it's committing to walking after work, committing to give up the office candy, or committing Full force to a workout program. Commit to something you can do, and DO IT. No excuses. See it through. You're not alone. You will have a whole team, a FAMILY behind you, supporting you. Chocolaty Overnight Oats

Ingredients: 
Makes 1 serving
1/2 c. old fashioned oatmeal
1/2 c. almond milk (regular milk will also work) 
1 heaping spoonful dark chocolate cocoa powder
1 tbsp. chia seeds 
1 packet or 1 tsp. sweetener (such as Stevia, Splenda or sugar), optional 
½ frozen banana, sliced
Directions: 
Combine oatmeal and sweetener in a container, cover, and refrigerate overnight. In the morning, stir up oatmeal mixture. Top with frozen banana slices, stir, and enjoy! Note: You may stir in more milk in the morning until your desired consistency is achieved.
