3 Ingredient Cookie

Sooo I cam across these INCREDIBLE and tasy cookies on the Tone It Up website. Seriously ladies...COOKIES!

I just had to give them a try and not only are they yummy but they are boyfriend approved! Now keep in mind that they aren't going to taste like a sugary cookie. But if you're eating clean...they will satisfy you without giving you a tummy ache.


The only things you need:
~ 2 Medium Ripe Bananas
~ 1 Cup of Oatmeal
~ 1 Scoop Protein Powder or 1 packet. Pick your flavor and brand. Obviously this will determine the taste.

What you need to do:Mash your peeled bananas in a bowl with a fork! I actually just threw them in our Ninja Blender and pulsed until it was smooth. 
Next, go ahead and add in the scoop of protein powder and keep on mixin! 
You might need to add a drop or two of almond milk or water to make your dough the right consistency. 
Now add in those those oats. I recommend Old Fashioned Rolled Oats.
Use a spoon to drop the dough on your cookie sheet...or if you'er like me...just just plop some dough on the cookie sheet. Now...I know I am not the only one to do this...so Im forewarning you...don't forget the non-stick spray!! You can get one of those olive oil mister bottles if you don't using PAM.
Lightly press your cookies so they are kinda flattened out. You dont have to go wild but just enough because it helps it bake better!

Bake at 350° for 15-20 minutes or until golden brown! If they are still a little mushy, just bake those babies for a little bit longer.







You know I like you to be creative...you can add just about anything you like. I CAUTION you not to go too crazy and make the caloric count out of this world...but you can consider adding things like raisins, pumpkin spice, pumpkin puree, peanut butter, pb2, cranberries, walnuts, slivered almonds…etc etc

The other thing you can do is make them into "bars" and just put the entire cookie dough in a pyrex dish. I tried it and it worked out awesome

I had SUCH a sweet tooth! So I'm always looking for healthy alternatives to satisfy my carb/sugar cravings. This bread hits the spot- it's tough to share but everyone I've given it to has LOVED it! 

Preheat oven to 350. Spray an 8 X 8 inch Pyrex dish with non-stick spray.

In small bowl combine: (set aside)
1/3 cup Ideal (Xylitol) ---->> you can find this at Whole Foods or use Stevia/Truvia 
2 tsp cinnamon

In a large bowl combine: (whisk together)
1 1/2 cups oat flour + 2 scoops vanilla whey protein
1 tbsp baking powder
1/2 tsp salt
1/2 cup Ideal (Xylitol) or ¼ cup Stevia in the Raw

In a medium bowl combine: (whisk together & add to lrg bowl)
2 egg whites
1 cup unsweetened almond milk (Almond Breeze)
1/3 cup or 1 4oz jar of baby food applesauce and ¼ cup low sugar vanilla yogurt (optional)

  • Pour a shallow layer of batter into the loaf pan (about 1/4 of the batter). 
  • Sprinkle heavily with half of the cinnamon/sugar mixture. 
  • Repeat with remaining batter & cinnamon/sugar on top. 
  • Draw a knife through the batter to marble. 
  • Bake for 24 to 28 min. Let cool for 10 min. Bread will be dense
NOTE: For the oat flour- I simply threw oatmeal in the blender and blended it down to a powder

Mmmm the house smells soooo good!

Serve with some greek yogurt mixed with cinnamon and stevia!


One Ingredient Banana Ice Cream

I am a FREAK for ice cream- I swear I have an unhealthy addiction to it. Every flavor is my favorite! It's that one food I can never pass up or say no to. I think I have a problem.... ;)


Today I had a craving so instead of adding my banana to my morning oatmeal, I thought I'd try something new! 
I've seen this Banana Ice cream recipe floating around on a few blogs here and there- I even posted about it once before but have never experienced the amazing-ness of it....until now....


Ohhhh mmmmm Geeee guys, Seriously. This is a MUST make. If you like whipped cream...you need to try this.


You only need ONE ingredient....BANANA!


Ok so here is the scoop:


Grab a banana (or two if you dont want to share!)
Peel
Slice
Freeze for 1-2 hours (or more)
Blend or throw in food processor (scrape sides when needed)
Keep blending! I did about 5 minutes


That's it!


I chose to add a dash of Almond milk and a pinch of PB2 
just because I wanted it creamy and a lil peanutty =) 
Add sliced almonds and sprinkle with chocolate shakeology for presentation and chocolaty goodness!




Keep blending! It goes from this...to total creaminess!







It has that soft ice cream consistency that I love- I always leave my ice cream out for 5-10 min before I eat it because I love when it's soft. Soupy is gross, but this is perfect.



Apple Crisp with Frosting

I daydreammmm about being able to eat without getting fat haha Wouldn't that be the life!?!? Luckily I've discovered how to make some delicious breakfast/desserts that FEEL like you're cheating but actually are healthy alternatives. Can I get an Aaaaa-men!

Seriously, I love breakfast so much that I could eat it for breakfast, lunch, dinner....any time, any where. MMmmmmmm! French Toast Eggs, Protein Cinnamon Roll, and my recipe collection just got a little bigger with latest creation.... Apple Crisp with Cinnamon!

Let's talk about this for a moment....just imagine the cool, creaminess of cool whip paired with the sweet tartness of apple....as you bite in you taste the cinnamon and little pieces of almond mixed in the oatmeal. Mmmmmmm oatmeal ;) 

Ok so down to business....here's how you make this baby

 Ingredients:


  • Old Fashioned Oats (I HATE quick oats- icky! they are chopped into a million lil bits and it tastes like gruel)
  • Almonds (I like Slivered)
  • Apples (any variety will work- I used Granny Smith because it got bruised in the trip home from the store)
  • 0% Fat Greek Yogurt
  • Vanilla
  • Cinnamon
  • Sweetener (I used Agave & Stevia but you can use Maple Syrup, honey, etc)
Ok so for starters, I cored the apple and cut into small pieces. Put in a pot on the stove, add cinnamon (use your discretion- I like A LOT). Add 1 tsp of agave, honey or syrup. Again, use what looks right. Turn on medium heat, stirring occasionally until it looks like apple sauce.

Note: I made this while I was cooking dinner so I'm not sure how long it took on the stove. You don't have to babysit it but keep an eye and maybe turn down to low heat after a little bit

Once you have your "apple sauce" mixture you can add it to your oatmeal. I used 3/4 cup. I like mine very "oatmealy" lol
Add almonds and more cinnamon- stir together

Now for the "frosting"

1/4 Cup Greek Yogurt + 1 packet of stevia + dash or two of vanilla. Stir. Voila! 

Top your apple crisp with the frosting! And enjoy!

Protein Cinnamon Roll

Wow, ok  seriouslyyyyyy this is MOUTH WATERING! and UNDER 200 calories! This is a super quick recipe for when you have a Cinnabon craving. All you need is a coffee mug and your microwave – no oven required!
CINNAMON ROLL (1 serving):
*4 TBSP of egg whites (or you can use 1 egg, calculations based off of egg whites)
*1/2 TBSP water
*1 tsp cinnamon
*1/2 tsp splenda or stevia (I calculated calories with splenda)
FITNESS FROSTING (1 serving):
*1 heaping tablespoon of Chobani nonfat greek yogurt
*1/4 tsp vanilla extract
*a tiny pinch of splenda or stevia to taste (I calculated calories with splenda)
DIRECTIONS:
1. In a coffee mug, mix protein powder, egg white, water, cinnamon and sweetener till blended well.
2. Place in the microwave for about 45 seconds. The batter will rise a ton so make sure you keep an eye on it so it doesn’t spill over. If it is not ready when you take it out just place in the microwave again for 10 seconds at a time until firm.
3. Flip over onto a plate and cut in 2!
4. For the fitness frosting, simply mix your Chobani greek yogurt, sweetener and vanilla extract together until smooth. Then top your little guys.
5. Sprinkle with a little more cinnamon on top for the Cinnabon effect.
6. EAT!!!!
NUTRITION FACTS: 194 cals, 0.7g fat, 6.9g carbs, 2.2g fiber, 37g protein (whoa amazing!)
