I LOVEEE Oatmeal, so I'm always baffled when people say they don't care for it. Honestly, I feel like they simply haven't discovered the right oatmeal "recipe"
When it's soggy, I think it's yucky so here is how I make it

1/3 Old Fashioned Oats
Dash of Cinnamon or Pumpkin Pie Spice
Sweetener (Stevia, honey...but my FAV is 1/2 tsp Coconut Sugar)
1 tsp Coconut Oil
1 Tbsp or less of water


Heat for 30 Secs

Vegan cake batter ice cream
Serves 4


This simple and delicious soft-serve ice cream is made with frozen bananas. With the help of a food processor, baking extracts and sprinkles, this healthy soft-serve ice cream is ready in less than five minutes!

Ingredients:

5 frozen bananas
2 tablespoons pure vanilla extract
1 teaspoon butter extract
1/4 teaspoon almond extract
1/4 teaspoon maple extract
1/4 teaspoon baking soda
2 tablespoons agave nectar
2 tablespoons sprinkles
Directions:

Peel five bananas and cut them into bite-size pieces. Place the bananas in a freezer bag and place the bag in the freezer until the bananas are completely frozen. Place the frozen bananas in the bowl of a food processor.
Process the bananas for about two minutes. Open the lid of the food processor and scrape down the sides.
Continue to process the bananas until they are smooth.
Add two tablespoons of vanilla extract and one teaspoon of butter extract.
Add one-quarter teaspoon of almond extract and one-quarter teaspoon of maple extract.
Add one-quarter teaspoon of baking soda.
Add two tablespoons of agave nectar.
Place the lid back on the food processor and pulse five to ten times until the ingredients are well combined.
Add two tablespoons of sprinkles.
Place the lid back on the food processor and pulse once or twice to mix the sprinkles into the ice cream. Serve immediately or store the ice cream in a sealed container in the freezer.

Turbo Fire Chili Recipe!!

Ohh Meee Geee seriously guys- you are gonna love this! If you love chili, this is a MUST try! I am culinary challenged and even I can make this!!

Turbo Fire Chili Recipe
1 lb lean ground turkey
1/2 cup diced tomatoes
8oz whole kernel corn, canned
1/2 onion, diced
2 garlic cloves
8oz black beans, canned
8oz pinto, chili, or kidney beans, canned
1tbsp tomato paste
1 pkg Lawrey's Chili seasoning
4 oz low-fat shredded cheddar cheese (optional)

Brown turkey. Drain and discard any fat. Place all ingredients except cheese into a slow cooker. Cook for 4 hours on low, or 2 hours on high. Top with 1 oz. cheese, if desired.

Did I tell you it was easy or what??? I dished this out into 4 containers to grab and heat for lunch! Guess what I'm having today?? lol


Vegetarians!
It's super easy to modify this recipe! Just forgo the turkey and load up on beans! I have literally put every kind of bean in this and it's always delish! I add corn, red peppers, mushrooms....tons of other veggies...you really can't mess it up!

Want something quick and simple, requires only two ingredients, is high in protein, low in sugar, and tastes like cheesecake?
If yes, then you’re gonna love me.

Behold – The Cheesecake Bowl

You only need two ingredients and you’ll have a yummy bowl that tastes like cheesecake. Plus, it’s high in protein (about 43-48 grams, depending on the protein powder you use) and very low in sugar. Win-win!

Ingredients

1 Cup Greek Yogurt
1 Scoop Protein Powder (use your favorite flavor)
That’s all you need.
Use your favorite protein powder brand and flavor. One of my personal favorites is Myofusion or BSN Dessert  You can't pick a bad flavor because they are all awesome =) 
You can also try plain protein powder and then add your own flavoring, such as cocoa powder and cinnamon and if you need more sweetness- use a packet of Stevia 

Directions

Mix 1 Cup Greek Yogurt with 1 Scoop Protein Powder

And you'll have a high protein, low sugar, quick and easy to make, cheesecake-like recipe.

Wow, ok  seriouslyyyyyy this is MOUTH WATERING! and UNDER 200 calories! This is a super quick recipe for when you have a Cinnabon craving. All you need is a coffee mug and your microwave – no oven required!
CINNAMON ROLL (1 serving):
*4 TBSP of egg whites (or you can use 1 egg, calculations based off of egg whites)
*1/2 TBSP water
*1 tsp cinnamon
*1/2 tsp splenda or stevia (I calculated calories with splenda)
FITNESS FROSTING (1 serving):
*1 heaping tablespoon of Chobani nonfat greek yogurt
*1/4 tsp vanilla extract
*a tiny pinch of splenda or stevia to taste (I calculated calories with splenda)
DIRECTIONS:
1. In a coffee mug, mix protein powder, egg white, water, cinnamon and sweetener till blended well.
2. Place in the microwave for about 45 seconds. The batter will rise a ton so make sure you keep an eye on it so it doesn’t spill over. If it is not ready when you take it out just place in the microwave again for 10 seconds at a time until firm.
3. Flip over onto a plate and cut in 2!
4. For the fitness frosting, simply mix your Chobani greek yogurt, sweetener and vanilla extract together until smooth. Then top your little guys.
5. Sprinkle with a little more cinnamon on top for the Cinnabon effect.
6. EAT!!!!
NUTRITION FACTS: 194 cals, 0.7g fat, 6.9g carbs, 2.2g fiber, 37g protein (whoa amazing!)

Ok, so I'll share the "Official recipe" and then what I did because lord knows I can't follow directions! I have to put my own spin on things lol


Ingredients


    2 Tbsp olive oil 1 onion, chopped 1 C carrots, sliced 1 C celery, including leaves 3 garlic cloves, minced black pepper to taste 6 C chicken broth 2 C chopped tomatoes 1/2 C quinoa 2 C WHITE kidney beans 1 tsp curry powder pinch nutmeg 3 C baby spinach


Directions

Heat oil in pan over medium heat in a large soup pot. Add onion and saute until soft.

Add carrots, celery, and garlic. Saute about 5 minutes.

Add broth, tomatoes, quinoa, beans, and spices. Bring to a boil, then cover and reduce heat. Simmer for 20 minutes or until quinoa is tender.

Add spinach and cover. Cook about 3 minutes, until leaves wilt and are soft.

Season with pepper, optional.

Number of Servings: 8

    2 Cups onion chopped 
    2 Cups carrots, sliced 
    1 Cup celery, including leaves 
    3 garlic cloves, 
    black pepper to taste
    8 Cups chicken broth
    2 Cups Sliced Mushrooms
    2 Cups chopped tomatoes (I used diced in the can! CHECK THE LABEL!! Look for a brand with JUST tomato!! Forget all of that crap they add!!)
    1/2 Cup Barley trust me! dont go crazy on the barley! lol
    1 Cup Whole Grain Rotini 
    2 Cups WHITE kidney beans 
    2 Veggie Bullion cubes 
    3 C baby spinach (I used frozen! Wayyyy easy!)

Here is the breakdown-

Throw frozen spinach in pot with 1/4 cup water. While that was simmering, I cut up all of the veggies! Throw those in a pan to saute! (Mushrooms, celery, carrots, onions, and whatever veggies you like!)

Pour your veggie broth in the mac daddy pot and bring to a boil- add boillions, veggies, white kidney beans, and whatever you think would taste good!

Then I added the barley and pasta. Currently my soup is simmering and the WHOLE house sounds AMAZING!!!
