Ok, so I'll share the "Official recipe" and then what I did because lord knows I can't follow directions! I have to put my own spin on things lol


Ingredients


    2 Tbsp olive oil 1 onion, chopped 1 C carrots, sliced 1 C celery, including leaves 3 garlic cloves, minced black pepper to taste 6 C chicken broth 2 C chopped tomatoes 1/2 C quinoa 2 C WHITE kidney beans 1 tsp curry powder pinch nutmeg 3 C baby spinach


Directions

Heat oil in pan over medium heat in a large soup pot. Add onion and saute until soft.

Add carrots, celery, and garlic. Saute about 5 minutes.

Add broth, tomatoes, quinoa, beans, and spices. Bring to a boil, then cover and reduce heat. Simmer for 20 minutes or until quinoa is tender.

Add spinach and cover. Cook about 3 minutes, until leaves wilt and are soft.

Season with pepper, optional.

Number of Servings: 8

My Spin the on the recipe!
    2 Cups onion chopped 
    2 Cups carrots, sliced 
    1 Cup celery, including leaves 
    3 garlic cloves, 
    black pepper to taste
    8 Cups chicken broth
    2 Cups Sliced Mushrooms
    2 Cups chopped tomatoes (I used diced in the can! CHECK THE LABEL!! Look for a brand with JUST tomato!! Forget all of that crap they add!!)
    1/2 Cup Barley trust me! dont go crazy on the barley! lol
    1 Cup Whole Grain Rotini 
    2 Cups WHITE kidney beans 
    2 Veggie Bullion cubes 
    3 C baby spinach (I used frozen! Wayyyy easy!)

Here is the breakdown-

Throw frozen spinach in pot with 1/4 cup water. While that was simmering, I cut up all of the veggies! Throw those in a pan to saute! (Mushrooms, celery, carrots, onions, and whatever veggies you like!)

Pour your veggie broth in the mac daddy pot and bring to a boil- add boillions, veggies, white kidney beans, and whatever you think would taste good!

Then I added the barley and pasta. Currently my soup is simmering and the WHOLE house sounds AMAZING!!!


Drink Lemon water in the Morning

So I've posted about this before...but I have to update everyone because I found a Wayyyyy easier way of dealing with your lemons! Since I am not a morning person, I literally try to find every short cut in the book to make my AM routine easier lol
To get the full benefits of drinking lemon water, the lemons have to be FRESH! That means...Im using a knife in the morning...umm HELLO...danger!
Sooo instead of dealing with the lemons in the morning...on Sunday I started JUICING the lemons and freezing it into cute little stars! I can't take credit for this idea, I picked it up from some of the ladies! But it makes life sooo much easier!
Just pop a little cube in your hot water and you're good to go!

Sooo whyyyy drink lemon water?




Number 1
It balances pH--Lemon is an acidic food, but once metabolized, it becomes alkaline. Why bother?

To put it most simply, alkalies help keep the oxygen in our blood at a safe pH level, and this helps our body heal itself, assimilate nutrients and fight off unwanted sickness.

Number 2
It keeps skin clear and glowing!   I have noticed this.  Hydration from drinking lemon water is great for moisturizing our skin from the inside out.  Lemon also contains lots of Vitamin C, which helps with wrinkles and blemishes. Who wants wrinkles?!

Number 3
It kick starts the digestive system--a big glass of lemon water is a great way to start the day.  It encourages the liver to produce bile which in turn aids in digestion.  It increases urination which helps purify it.  It also helps with heartburn and constipation. **giggle** It has a strong cleansing effect on your liver and will help you eliminate those toxins!

Number 4
It helps with weight loss--I have read that keeping the body in an alkaline state helps people lose weight faster. Your metabolism will get a nice kick start for the day!  Lemons are high in fiber pectin, which helps keep one full, longer.  They also have a diuretic effect, which helps with water weight gain.

Number 5
It helps control the coffee habit- I feel like the lemon water wakes me up more than coffee does... plus coffee is icky! lol

...which brings me to bonus Number 6:
It helps kick the pop habit--I have found that adding lemon to sparkling water and adding a whole lot of ice satisfies any soda craving I might have.  I gave up pop and I really don't miss it.  I don't think I could stand the sweetness of it now, but I DO miss the fizz, so my "Lemon Spritzer"--lemon +sparkling water+ice--is the perfect solution!

Try to drink it will a straw to keep the lemon off of your teeth or simply rinse with a glass of water after!

Quick Workout to do ANYWHERE!

The week between Christmas and New Year’s can be a black hole when it comes to working out — key word: Can.
It doesn’t have to be! I’m determined to not fall off the wagon just because I’m surrounded by chocolate! 
Even if you are traveling this holiday or just getting back into your routine, you can still fit in a quick 30 min workout pretty much anywhere!


1. Warm up for eight minutes. You can do whatever you like to get your heart rate up. Do some jumping jacks, jog in place or dance to your favorite song.
2. Do one minute of jungle squats. (Lower body)
3. Do one minute of push ups. (Upper body)
4. Do one minute of reverse V lunges. (Lower body)
5. Do one minute of modified chair dips. (Upper body)
6. Do two minutes of cardio. (Whole body)
7. Do one minute of abs exercises. (Whole body)
8. Take a 30 second break.

Repeat steps 2 through 8, three times.

A couple of weeks ago, I was grocery shopping... COMPLETELY in my own world and just having kind of a miserable day. I was in the process of searching for the perfect apples- I feel like the need to inspect each one making sure they are just the right size and firmness. This girl came up to me and simply said..."I really like your hair"

Healthy Pizza Recipe- Cauliflower Crust Pizza

Serves 2

Ingredients
  • 1 cup cooked, riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed garlic
  • ½ teaspoon garlic salt
  • olive oil (optional)
  • pizza sauce, shredded cheese and choice of your toppings*
Instructions

To "rice" the Cauliflower: Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself. One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

To Make the Pizza Crust:
  1. Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
  2. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
  3. Bake at 450 degrees for 15 minutes.
  4. Remove from oven.
  5. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
*Note: Toppings need to be precooked since you are only broiling for a few minutes.

Tai Chi

Tai Chi is an old martial art that is focused manipulating one’s chi through controlled movements or postures. Chi is an energy that is the core and basic foundation of all Chinese methods of healing. Not like its Bruce Lee’s predecessors, Tai Chi is more a peaceful movement art that is muscle toning, yet relaxing. Many have adopted this technique to relieve stress, build strength, or to assist with treatments for chronic illnesses or cancer.
Tai Chi is another therapy that many patients have adopted while undergoing conventional cancer treatments. Just like in Road House, Tai chi is used to stimulate muscle function and relax the mind. Though everyone might not do it as well as Patrick Swayze, everyone will achieve the desired energy balancing effect. There have been many patients that swear by the use of Tai Chi, and actually teach sessions at local hospitals.

It is understood that the chi and body have to work in harmony for a healthy sense of well-being to be achieved. For example, a person that is sick or in pain, means the chi is interrupted or unbalanced. To re-energize the chi and return it to its normal flow, a series of precise movements must be performed. The movements and postures of Tai Chi are similar to dance, in that each movement is followed by counter-movement that perfectly coincides. These slow, precise movements combined with controlled breathing from the diaphragm produce the desired effect.

With the time and mastery, Tai Chi provides an increase in muscle mass and tone, flexibility, improved posture, and increased stamina. Cardiovascular benefits are another result from the carefully articulated and focused breathing throughout each movement of the body. Tai Chi is a perfect exercise and relaxing agent for just about everyone, and is also becoming a complementary therapy for cancer treatments. Martha McInnis, a breast cancer survivor, learned about using Tai chi as an integrative medicine when she was undergoing radiation, and hails that Tai chi made her live better and gather the strength to fight her cancer with full force.

Though it is not a direct cure for certain ailments and cancer, it helps ease the pain of treatments, relieve stress, and promotes immune system function. Many doctors agree with Martha, and recommend patients with aggressive cancer treatment plans to adopt Tai Chi or any complementary therapy. Patients diagnosed with cancers, like non-hodgkin’s lymphoma or mesothelioma face difficult road ahead. Since intense amounts of chemotherapy, surgery, and/or radiation are the main mesothelioma treatment options, or alike cancer, a complementary therapy is a great way to help settle the mind and body. The increased wholeness and wellness of the whole body is what doctors and patients claim to be the benefit of using Tai Chi with conventional cancer treatments.
